Recipe: Super Easy Nachos Supreme If you've enjoyed ordering Nachos Supreme at your favorite Mexican restaurant, then you'll love to be able to make the same dish at home! This recipe is so easy that your kids can make it, too! Ingredients:
You'll need:
Oven-safe 13" x 9" cooking dish ---or--- Cookie sheet covered with aluminum foil Non-stick cooking spray
Directions:
Cook ground meat, season to taste, drain. (For a good tip about keeping pre-cooked seasoned ground meat in the freezer, please see Jan's Dough Tip #6.)
If using pre-cooked seasoned ground meat, then heat in skillet or microwave.
Open can of refried beans and heat (I "zap" the refried beans in a microwave-safe bowl for about 2 minutes)
Open can of sliced olives, rinse, and drain.
Empty salsa into a bowl. Stir in 1/2 bag of shredded cheese.
Open jar of jalapeno peppers (if you are using them)
Preheat oven to 250 degrees.
If using oven-safe cooking dish, lightly spray bottom of dish with non-stick cooking spray.
If using cookie sheet covered with aluminum foil, cover with two layers of foil. Lightly spray with non-stick cooking spray.
Crush one handful of corn chips into a bowl. Stir in some refried beans and salsa/cheese mixture. Spread a thin layer in bottom of dish (on cookie sheet).
Add a layer of corn chips. Try not to overlap too much.
Spoon on ground meat, refried beans. Just plop small spoonfuls on the chips, no need to attempt to spread. Add a layer of corn chips. Start to make a pyramid type shape (that is, this layer of corn chips is smaller than the first layer).
Spoon on salsa/cheese, add in olives, and jalapeno peppers (if desired). Add another pyramid layer of corn chips.
Sprinkle shredded cheese, dollop spoonfuls of ground meat and refried beans. Add another layer of corn chips.
Continue until you have made as much Nachos Supreme as you desire. There are really no set rules for assembling the Nachos---just be creative!
Put in oven for approximately 20 minutes, or until shredded cheese has begun to melt. Serve directly from the oven with your favorite beverage (WARNING: Cooking dish (cookie sheet) is HOT!).
All these ingredients can be purchased and kept on hand ahead of time. You can keep pre-cooked/seasoned ground meat in the freezer. You can thaw it in the microwave at the time of use. Shredded cheese will keep for several months in the freezer and thaws out quickly. Everything else stores in your pantry or kitchen cupboard.
This makes a great snack for watching football, for any get-together or party, or makes a great feast for Dad on Father's Day!
