Sandwich Spread

 

This is a favorite of mine---and reminds me of summers long past. It is great picnic fare, and also makes really tasty party hors d'oeuvres. It can be made ahead of time and keeps well in the refrigerator for several days.

 

You will need:

 

1 pound of Beef Bologna (you can substitute boiled/deli ham, a canned ham, or leftover cooked ham; I prefer Boar's Head all beef bologna)
4 hard-boiled eggs
Sweet Pickle Relish

Mayonnaise (your preference for mayo, salad dressing, or other mayonnaise-type product; I prefer Miracle Whip Light)

2 carrots, 2 stalks of celery (optional)

Salt and pepper (optional)

 

Meat grinder or food processor

Mixing bowl

 
Instructions:

Hard-boil eggs ahead of time and refrigerate until cold.

Grind bologna (or ham) using the finest grind attachment for your meat grinder. If you are using a food processor, mince bologna (ham) at the finest setting.

Grind (mince) hard-boiled eggs, adding to the meat as you go.

Grind (mince) carrots and celery (if desired), adding to meat and egg mixture. (Carrots and celery add a very nice flavor to the spread, and add color as well.)

Mix in 1/4 cup of sweet pickle relish. (You may want to add more, depending on desired taste.) 

Start mixing in mayonnaise in small dollops. Mix in until spread is moist, but not loose. Spread should be thick enough to hold together (such as putting a spoonful on a cracker).

Continue to mix in relish, mayo, salt, and pepper to taste. (For low-sodium diets, omit salt and add a little garlic powder.)

Serve on wheat bread or roll, with leaf lettuce. You can also serve as hors d'oeuvres by putting out a bowl of spread and serving with crackers (try Stonewheat crackers!)

Sandwich spread also goes great on soft rolls (my favorite is potato or snowflake rolls), and even hotdog buns. And it is great for a summertime picnic!
