Recipe: Waldorf Salad

It was never summer in our house until Mom made Waldorf Salad! It just seemed to make a hot summer day cooler.

Mom's got two versions of Waldorf Salad---I'm sure you will enjoy one of them!

Waldorf Salad, version 1

Ingredients

  • 1 large red apple, with skin left on for color

  • 1/2 cup of chopped celery

  • 1/2 cup of halved grapes

  • 1/2 cup of minced walnuts

  • 1/4 cup of chopped raisins

  • 1/4 cup of mayonnaise (more if desired)

  • 1 tablespoon of fresh lemon juice

  • salt and pepper to taste

  • lettuce for a garnish

Preparation Directions

Mix all ingredients in a large bowl. Chill for 1-2 hours before serving. Serve in a chilled bowl, on in individual bowls lined with one or two lettuce leaves.

Waldorf Salad, version 2

  • 2-1/2 cups of red apples, with skin left on for color

  • 2/3 cups of chopped celery

  • 1/3 cup of raisins (plumped with hot water)

  • 1/3 cup of chopped walnuts

  • 1/2 cup of mayonnaise

  • 1 tablespoon of sugar

Preparation Directions

Mix all ingredients in a large bowl. Chill for 1-2 hours before serving. Serve in a chilled bowl, on in individual bowls lined with one or two lettuce leaves.
