About Jan

 

This is a fast and easy recipe for a coffee cake with a unique taste! This recipe requires Jan's Dough Sourdough Starter. For your free recipe to create your own sourdough starter, please see the link to the left.

 

You'll need:

 

Group 1

  • 1 cup STARTER (room temperature)

  • 7 tablespoons MELTED UNSALTED BUTTER

Group 2

  •  ¾ cup SUGAR

  •  1 EGG

  •  ¼ teaspoon SALT

  •  ½ teaspoon VANILLA

Group 3

  • ¾ teaspoon BAKING SODA

  • ¼ teaspoon SALT

  • 1 cup REGULAR FLOUR

Group 4 (topping)

  • 1 tablespoon UNSALTED BUTTER

  • 1/3 cup BROWN SUGAR

  • 1 tablespoon REGULAR FLOUR

  • 1 teaspoon CINNAMON

  • 1/3 cup OATMEAL

DIRECTIONS

 

Group 1

  • In crock, glass, or plastic mixing bowl, mix STARTER and MELTED BUTTER

Group 2

  • Combine all ingredients in separate bowl

  • Pour into Group 1 mixture and blend thoroughly

Group 3

  • Combine all dry ingredients

  • Add to mixture, stir well

  • Pour batter into well-greased 9" X 7" cake pan

Group 4

  • Using a fork, combine all ingredients in a separate bowl to create crumb topping

  • Sprinkle topping evenly over batter in cake pan

  • If you do not care to use the oatmeal, substitute one additional tablespoon of flour (to prevent all of the brown sugar from melting into the coffee cake as it bakes).

 

BAKING

  • Bake in preheated 350° oven for 35–40 minutes, or until it tests done (test as you would a cake, using cake tester or toothpick)

  • Coffee Cake will be slightly rounded in the middle of the pan

 

SERVE

  • Allow to cool, although it is OK to cut while still warm!

  • For a real treat, drizzle vanilla frosting (the kind you can get in a plastic tub) over your Sourdough Coffee Cake while it is still warm! Yum…(and hey! No calories!…yeah, I keep dreamin’…)

  • Jan's Dough Sourdough Coffee Cake warms up easily in your microwave!

 

This Coffee Cake will go quickly, so you might want to double the recipe and make two!

Set out the starter, egg, and butter the night before and you can have this for your Sunday “read the paper and be lazy” morning!

           

Think about baking this up in the smallest loaf pans you can find—great for an office treat for those staff and friends who have been working hard and coming in early! Just be sure to modify the baking time: fill the pans about 1/3 full and test starting at 15 minutes.
