You can turn any recipe for coffee cake (or even cake) into muffins or cupcakes. Muffins are especially easy to serve---and eat---if you are having a brunch or entertaining guests who are staying overnight. There's no need to cut the coffee cake, or use plates and forks. Simply set out the muffins, in the muffin papers, with some napkins.

Make your favorite coffee cake recipe (or just make a cake recipe) according to the directions. There is no need to change the recipe in any way.

Using large muffin tins, insert a large muffin/cupcake paper into each muffin cup. This eliminates the need to grease the muffin cups, and makes it easy to take out the baked muffins.

Fill each muffin paper about halfway. If there is any type of topping (such as brown sugar crumb or, my favorite, oatmeal and brown sugar), then reduce the amount of coffee cake batter you put in the cup to allow for the topping.

Bake at the temperature in the recipe directions. However, muffins probably won't take as long to bake, so you should check them at 5-10 minute intervals.

Test with a cake tester and remove the muffins as soon as the tester comes out clean. It will be easy to overbake the muffins, so the first time you do this, I suggest that you check the muffins every 5 minutes. After you've made coffee cake muffins a few time, you'll know how long they need to bake.

Remember also to turn the muffin tins at least once while baking. There are very few ovens that bake evenly and by turning the tins, you'll bake the muffins equally.

Allow the baked muffins to cool about 5 minutes and then take them out of the muffin tins. Allow to completely cool---or serve warm. (Be sure to check Tip #8: Prepare for a Busy Baking Day! if you are planning to make coffee cake muffins in the morning to have for that morning's breakfast or brunch.)
